Nutrition students prepare & distribute food at shelter
Janine Jensen, Professor of Health and Physical Education, recently incorporated a service learning project in two of her nutrition classes. Jensen and her classes went to the Tulsa Day Center for the Homeless twice this semester to serve healthy foods that they had prepared.
Fifty students participated, serving approximately 150 people. Each student was required to find a healthy food recipe, prepare it and make a copy of the recipe and a “Nutrition Fact.” After the event, students wrote reflection papers.
“This is the first time I incorporated a service learning component in my class and I feel as though it was a great success,” Jensen said. “I plan on doing it again. I think it was very rewarding for my students.”
